Happy Birthday My Dear!

I’ve been searching over the internet, what to do during my dear’s birthday. Candle light dinner
? Home made or book a place
? I think home made is always better as usually my dear will do the cooking and my cooking kinda sucks. The dinner couldn’t be the surprise, as I will be doing it in my dear’s house. The only think I can surprise him is the birthday cake.
This time, I’ve decided to bake a dark chocolate mousse cake. Hmm, I saw the recipe, kinda hard, but I just try my best. I’ve applied a day off in order to make the surprise. Time was really tight. After spending hours to buy ingredients for the cake and dinner, I finally can rush home to start baking. I didn’t have a chance to take any pictures of baking. I was really clumsy while doing it and I’ve failed the chocolate mousse part, I asked Yan to helped me rush to buy another thicken cream to complete my cake.
Argh… I was running out of time, I put my mousse in the fridge and thought of continue when I get back dinner, but my dear will be here. Hmm, bad hair day, I need a place, Yan’s room?
, I took the bowl of mousse and cake base into her room and start pouring it onto the cake. Even if I have the chance to complete it, I still need hours to chill it. Argh, no choice, 12 am is around the corner, I just continue the suprise, without candles as the mousse still soft. As planned, I suprised my dear with a lousy birthday song and cake. Anyhow, after chilling the cake for a night, I managed to get the cake in shape. Finally.
We’ve decided to eat right after dinner. For the dinner, hmm I wished to cook something that he likes to eat. Salmon! Lemon and Herbs Smoked Salmon, as for myself, I’ve bought myself a piece of dory fish. The pieces of fish wasn’t really enough. I need some side dish. I’ve picked Mashed Potato Casserole and Aparagus with Red Bell Peppers.

** Dark Chocolate Mousse Cake Recipe for velverse
Chocolate Génoise :
118 grams All-purpose Flour, sifted
70 grams Cocoa Powder, sifted
6 Large Eggs
200 grams sugar
28 grams Unsalted Butter, melted
Milk and Dark Chocolate Mousses :
812 grams Thicken Cream
284 grams Belgium Chocolate

I’ve slightly change the recipe as I couldn’t find some of the ingredient. If you do not want it to be too sweet, you can change the chocolate to dark chocolate / belgium chocolate as I did.
If you refer to the url, in Step 5, whisk the heavy cream, as you can see, I’ve changed it to thicken cream, I’m not very sure what is the different, but it works fine. While whisking the thicken cream, make sure the cream is chilled. If the cream is not cold enough, you will have the cream spoiled half way of whisking. You can place the bowl of cream over the ice water which whisking.
